INGREDIENTS
Shortbread

  • 1 Tbsp instant espresso (recommended: Starbucks Via)
  • 1 Tbsp boiling water
  • 3/4 cup unsalted butter, at room temperature
  • 2/3 cup sugar
  • 1 vanilla bean, seeds scraped
  • 1/2 tsp vanilla extract
  • 1/8 tsp salt
  • 1 3/4 cups flour

Topping

  • 1/2 cup semisweet chocolate chips
  • 1 tsp coconut oil
  • turbinado sugar
